DESCRIPTION:
COMPONENTS:
The JOSHUA I SERIES VENTILATOR consists of four basic parts:
- a grease extractor section
- a ventilator enclosure
- a fire damper assembly.
- a ventilator wash control panel.
STYLES:
The JOSHUA I SERIES VENTILATOR is available in several styles to accommodate either island or wall type cooking layouts. Also, full length integral supply air is offered in different configurations as an option on all Joshua Series Ventilators:
- internal short cycle;
- low velocity, perforated front discharge;
- fixed registers either for front discharge or down discharge.
STANDARD CONSTRUCTION:
All JOSHUA SERIES VENTILATORS are constructed entirely of type 304 stainless steel. The grease extractor section is #16 gauge stainless steel and the ventilator enclosure is a minimum of #18 gauge stainless steel with #16 gauge stainless steel ends. The canopies of either single or double island units are finished on all four sides. The extractor chamber is easily accessed by full length, removable panels with lift and turn latches. These panels do not exceed 46" in length for convenient access into all interior portions of the extraction chamber for periodic inspection and routine maintenance. The hot water manifold is stainless steel square tubing fitted with brass spray nozzles. This assembly can be easily removed from the extraction chamber for preventative maintenance without interrupting daily cooking operations.
FIRE DAMPER ASSEMBLY:
The fire damper is a #12 gauge stainless steel U.L. listed assembly activated by either an electromechanical device or by a fusible link device. Either type will interrupt power to the exhaust fan as well as seal the exhaust duct opening to prevent the spread of fire through the duct system should an emergency situation occur.
CONTROL PANEL:
The JOSHUA I SERIES Control Panel Package consists of a push button station with indicator lights and timer for fan and wash cycle control and a hot water/detergent piping assembly with detergent pump and tank. Normally, these components are mounted in a stainless steel housing with a hinged stainless steel access doors. This Control Panel can be mounted remote from the Ventilator or it can be mounted within a GREITZER POWER-PAK
OPTIONS:
A variety of options are available with the JOSHUA I SERIES VENTILATOR including: factory installed fluorescent or incandescent lights; integral full length supply air plenum with choice of discharge configuration; factory installed Fire Protection Systems; prewired damper assemblies; prepiped hot water manifold; factory interconnected drains; remote detergent station with audio & visual low level detergent alarms; time of day automatic operation programmer; sequential wash; constant cold water mist (JOSHUA II SERIES VENTILATORS).
PRINCIPLES & OPERATION:
The JOSHUA SERIES VENTILATOR captures and removes smoke, grease, heat (convictive), dust, lint and odors that are produced by cooking operations in the kitchen area. This cleansing action greatly reduces the potential fire hazard and maintenance problems caused by the accumulation of greasy flammable material in the exhaust ductwork. The extraction system of the JOSHUA SERIES VENTILATOR is totally self-contained: no filters, cartridges, revolving devices, removable parts or constantly running water is required to remove contaminants from the exhaust air stream.
GREASE EXTRACTION:
The extraction system is comprised of a series of baffles running parallel to and throughout the entire length of the interior of the ventilator through which the exhaust air stream must pass. The exhaust air stream, as it enters the intake slot of the ventilator, is rapidly increased in speed to approximately 1000 feet per minute. As this new high velocity air stream moves through the ventilator, the baffles force it to make radical changes in direction. At each turn, the heavier-than-air particles of grease, moisture, dust and lint carried by the air stream are "thrown out' of the air stream by centrifugal force onto the interior surfaces of the ventilator where they then drain into the grease collecting gutter at the bottom of the ventilator. The high velocity air stream, now free of entrained particulate matter passes through the exhaust duct collar, into the ductwork, to the exhaust fan where it is discharged into the air.
AUTOMATIC CLEANING:
The accumulations of grease, dust and lint extracted from the exhaust air stream during cooking operations are removed from the ventilator interior by a daily preset timed cleaning cycle. At the end of each daily cooking period, when the exhaust fan 'STOP' button, located on the ventilator control panel, is depressed, the exhaust fan is shut off and a combination of hot water and grease reducing detergent solution is introduced into the ventilator interior through brass spray nozzles. The spray nozzles' strategic positioning allows for complete coverage of all internal ventilator surfaces. An adjustable timer, located in the ventilator control panel, controls the duration of the wash cycle. The ventilator is now ready for the next day's cooking operations.
IN CASE OF A FIRE SITUATION:
Should a fire situation occur at the cooking equipment and the temperature of the exhaust air stream reach 250' F in the ductwork, the following responses will occur: 1) the power to the exhaust fan is automatically interrupted; 2) the fire damper at the exhaust inlet will automatically close, sealing the opening at the exhaust duct to prevent flame and hot gases from entering the duct work, and to stop the natural draft that may support combustion; and 3) the wash cycle is automatically activated introducing a fire quenching water spray into the extraction chamber. These responses are in -addition to the Fire Protection System of the Ventilator which is activated independent. As an added safety feature, the ventilator cannot be put into operation until the temperature reaches a safe level and the fire damper is manually reset.
